Ingredients

  • 1 pound 450g Italian sausage, casings removed
  • 1 medium onion diced
  • 3 carrots sliced
  • 2 celery stalks chopped
  • 4 garlic cloves minced
  • 4 cups 950ml chicken broth
  • 2 cups 475ml heavy cream
  • 1 cup 100g grated Parmesan cheese
  • 2 cups 60g fresh spinach
  • 1 tablespoon Italian seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup 140g small pasta (optional)

Instructions

  • Heat olive oil in a large pot over medium heat and brown the Italian sausage, breaking it into small pieces. Remove sausage and set aside.
  • In the same pot, sauté onions, carrots, and celery until softened, about 5 minutes.
  • Add garlic and Italian seasoning, cooking for another minute.
  • Return sausage to pot, add chicken broth, and bring to a simmer. If using pasta, add it now and cook until tender.
  • Reduce heat to low, stir in cream and Parmesan cheese until cheese melts.
  • Add spinach and cook until wilted.
  • Season with salt and pepper to taste.

Notes

To prevent curdling, avoid boiling the soup after adding the cream and cheese. If the soup becomes too thick, thin it with additional warm chicken broth.
