Ingredients
1pound450g Italian sausage, casings removed
1medium oniondiced
3carrotssliced
2celery stalkschopped
4garlic clovesminced
4cups950ml chicken broth
2cups475ml heavy cream
1cup100g grated Parmesan cheese
2cups60g fresh spinach
1tablespoonItalian seasoning
2tablespoonsolive oil
Salt and pepper to taste
1cup140g small pasta (optional)
Instructions
Heat olive oil in a large pot over medium heat and brown the Italian sausage, breaking it into small pieces. Remove sausage and set aside.
In the same pot, sauté onions, carrots, and celery until softened, about 5 minutes.
Add garlic and Italian seasoning, cooking for another minute.
Return sausage to pot, add chicken broth, and bring to a simmer. If using pasta, add it now and cook until tender.
Reduce heat to low, stir in cream and Parmesan cheese until cheese melts.
Add spinach and cook until wilted.
Season with salt and pepper to taste.
Notes
To prevent curdling, avoid boiling the soup after adding the cream and cheese. If the soup becomes too thick, thin it with additional warm chicken broth.
